Welcome to Working Mom’s Cookbook!

My name is Angie, and I’m a busy working mom.  I love to cook, but I find myself lacking in the “planning ahead” department, so we eat pre-packaged or take-out food, or eat late when I can pull something together.  I’m tired of stopping at the grocery store on my way home from work to pick up a rotisserie chicken, only to find they’re all out!

As a working mother, I’m always on the lookout for new (and easy!) recipes to cook for my family. I’d like to get to the point where I’ve cooked ahead and frozen some meals - I’ll put those out here too, once I’ve done it! My goal for this site is to have a “one-stop shop” for my recipes and meal planning. Feel free to try some of these - and let me know how they turn out!

This is a work in progress. I’ll add recipes as I can, but please be patient! If you’re looking for a specific recipe, please let me know. I have a ton of cookbooks, and I love to hunt for recipes online!

Angie - I’m so glad you have started this blog. I’m always looking for a place to find good, easy recipes. I just hate having to look up recipes in a book or a recipe file and would much rather locate them on the computer. So I’m sure I’ll make great use of your site!

Ohh…I actually had forgotten that one! I will add that soon…and make it soon too - it’s been years…I don’t think I’ve ever even made it for Tim…he will like it.

Here’s another tip for leftover crockpot chicken (make double, it freezes well). Take the leftover chicken and all the gravy and add the leftover rice you made to go with it. Then add a bag of your favorite mixed vegetables and a half a can(approx.)of evaporated milk. Mix that all up and put it in an uncooked pie crust. Top with another pie crust bake for 1 hour at 350 and you have your own pot pie. YUM!!!

Mmmmm…I posted that tip as a comment under “Chicken Pot Pie” and “Crockpot Mushroom Chicken”… thanks!
